Spinach is one of the most nutritious green
vegetables, being a high source of iron and other nutrients.
However, it is also that vegetable that most people cringe at.
They would prefer to take food supplements that have a portion
of spinach in their meals. Well, it is all about the way it is
cooked. It is important to be innovative when serving such
vegetables, and need not be cooked in the same tried and tested
way passed down through generations.. |
Maybe one can experiment with one of the spinach salad
recipes, provided here:
Spinach and mushroom salad
- 2 to 3 bunches of fresh spinach, washed and chopped to small pieces
- 1 ½ cups of sliced mushrooms
-½ cup of chopped red pepper
- ¼ kg of diced cottage cheese
- 3-4 tablespoons of diet salad dressing
- Salt to taste
- Pepper
-A pinch of sugar
- 2 teaspoons of vinegar
Combine all the vegetables and cottage cheese together in a salad bowl.
Then add the diet salad dressing, stirring it in well. Then add the
salt, pepper, sugar and vinegar and mix properly till it blends into the
salad. Keep this in the fridge for at least five-to-ten minutes before
serving..
