| No one can deny the importance that Indian food has all over the
world. Indian cuisine which is famous for its herbs and spices is very
popular and its food recipes have evolved over a period of time. Some of
the recipes are very simple but some of them are enough to drive one up
a wall. Whatever the nature of the recipe, the end product is usually
very well received and ultimately it is worth the trouble. It is very
difficult to resist Indian food. The regional differences in preparation
of food make the recipes all the more interesting. Take North India for instance-The wide variety unleavened breads and the way it is prepared is just delicious. Rotis and phulkas made from flour and water are cooked on a tawa. The same roti basted with either butter or ghee would make a paratha. Deep fry the roti and it is called a puri.. If a tandoor is used to cook the roti you get a naan or a khakra. A deep fried bread with a lot of spices for filling becomes a kachori. Each one of them has a unique taste. Taken along with dal, fried vegetables, curd, chutney and pickles, it leaves behind a feeling of being sated. Chilli, lime, ginger, mango, amla can be made into pickles. The mixed pickle, the Punjabi pickle, the navratan chutney, and the apple and amla murabbas, all these make the food more appetizing. The difference between the north Indian pickle and the south Indian pickle is the oil base which is used. In north India, mustard oil is usually used and the souring agent is vinegar. Spices like cumin seeds, ajwain, are added. No meal is complete without a dessert. One can choose from an array of sweets like gulab jamuns, sandesh, chum chum and rasgullas or opt for the humble kheer made from rice and milk. Kulfi, the Indian version of Ice cream is also very common. If you want something hot to drink, then masala chai, a concotion of milk, tea and spices is always on the cards. On the other hand, if you want a cool drink, nimbu pani, lassi or “nariyal ka pani” are good options.
