The mention of the word “cake” sets our salivary
glands operating overtime, for very few of us can resist this
special dessert. For those Vegans who want” to have their cake
and eat it too”, here are a few recipes that could satisfy their
palate.
Take a couple of biscuits and powder them in a mixie.
Mix drinking chocolate, icing sugar and cocoa powder in the
ratio 1:1\2:1\4, and sieve the mixture a couple of times. Beat
unsalted butter until it is nice and fluffy and add a couple of
drops of essence. Add the dry mixture to the butter gradually
and mix well. . |
Take half a dozen of those biscuits and dip them for a
couple of seconds in milk and place them on butter paper in a tray so
that they form a square or rectangle. Sprinkle the chocolate butter
mixture over the biscuits so that they are completely covered.
Over this place another layer of biscuits dipped in milk and repeat the
procedure. Use chocolate icing or white icing over the top and sides
until no biscuits are visible. Put the mixture in a fridge for a couple
of hours and you have delicious biscuit chocolate cake before you.
If you want to cut out both eggs and milk in your cake, here is a recipe
for you. Take white sugar (say 1\1\2 cups), add raisins, a little salt,
some cinnamon and clove and a couple of spoons of butter. Add a couple
of cups of hot water, mix well and boil well. After cooling, add about 3
cups of flour, a spoon of baking powder and a spoon of baking soda and
mix slowly.
Transfer the mixture to a tray coated with butter paper. Preheat baking
oven to 350deg fahr., Bake at this temperature for one hour, cool and
use frosting over it. For the frosting, mix sugar (1 cup) in one
tablespoon of milk or water to which essence has been added. Heat
slightly and allow butter to dissolve in it. Beat till you get a smooth
fluffy texture. Use this to cover the cake on all sides.
If you want to include fruits or banana in your cake, then here’s how
you go about it. Take a cup of mixed fruits or mashed bananas with a
little limejuice for starters, mix with 2 cups of self-raising flour and
a little milk. Take a cup of water, a cup of sugar, add about 125 gms.
of butter and heat the mixture till the butter completely melts. Cool
and then add a tsp. of sodium bicarb to it. Mix this with the fruit and
flour mixture, transfer to a greased tray and bake at 180Deg. centigrade
for an hour. A delicious fruitcake awaits you.
Health conscious? Try this one out. Mix a cup of self-raising flour,
with a cup of mashed banana, a cup of shredded coconut, a cup of dried
apricots and a cup of soymilk. Add a 1\4 cup of powdered sugar, mix well
and cook at 180 deg. Centigrade for an hour or so. Your health cake is
ready.
If you are one of those who believe in the efficacy of dry fruits, then
the date, cashew, walnut cake is the one for you. A dozen seedless
dates,1\2 a cup refined oil, similar quantities of sugar and milk is
all that you require. Grind dates, which have been soaked in milk with
sugar till you get a fine paste. Mix with oil and keep aside. Sieve a
cup of flour with a tablespoon of baking soda and slowly add to the
ground mixture. Finally add the broken pieces of cashew and walnut and
mix well. Transfer to a greased tray and bake for about 45 minutes at
350 deg fahr. A nutty cake awaits you.
If you do not want to use refined flour or self-raising flour for your
cake, then try this one out. 2 cups of rava, 1tsp of baking powder, 1tsp
of baking soda should be sieved together for a couple of times. To this
add 1 cup of curd, 1 cup of cream, 1\2 a cup of milk, 1 1\2 cup of
powdered sugar and mix well. Transfer to a greased tray and bake for
about 20 minutes slowly increasing the temperature from 150deg. C to
300deg C. Cool and slice
If you want to add fiber to your cake, take a cup of oats, mix with a
cup of raisins, add 1\2 a cup of self-raising flour and a similar
quantity of sugar and shredded coconut. Mix in butter as required to get
a soft fluffy mixture add a tablespoon of syrup and bake at 180-200 deg.
C till the cake starts to turn brown. For a change, cut the cake while
it is still hot.
And so it goes on and on, there is just no end to baking cakes, but
while we are at it, here are a couple of pointers. Always ensure that
the oven is preheated to the correct temperature before placing the cake
in it. See that the batter is never too thick. Use only chilled cream
while mixing it in and beat with upward strokes. While making butter
icing, beat butter well to make it fluffy and light, add sugar and beat
again and last but not least ensure that baking is even..
