Who said that those suffering from diabetes
couldn’t enjoy puddings and cakes? Well, they too can, except
that they should avoid off the counter cakes and pastries and
have one of the numerous diabetic cake recipes prepared at home. These
are in fact easy to make and instead of sugar, one needs t use
to use a sugar supplement. These are generally low calorie cakes
and can be eaten by anyone who is health conscious, which also
includes heart patients, amongst others.. |
Diabetic raisin cake
- 1 cup of water
- ¾ cup of black raisins
- ½ cup diet softened margarine
- ½ teaspoon vanilla essence
- 1 cup of sugar substitute
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1 teaspoon of cooking soda
- ½ teaspoon of grounded cinnamon
- ¼ cup of fresh orange juice
Preheat oven to 350 degree F (175 degree C). In the meantime grease the
baking dish and set aside. No place the raisins in a bowl and pout the
boiling milk over it. Leave it aside for about five minutes. Then in a
large bowl beat the margarine with the electronic beater till it becomes
fluffy.
Add the vanilla essence and stir well. Add the sugar substitute and beat
the mixture, till it is smooth. Set aside and in a separate wide bowl
mix together the flour, baking powder, cooking soda and cinnamon. Add
this to the margarine mixture and beat it for a minute till all the
ingredients blend in.
Then add the orange juice and blend it into the mixture. And finally add
the milk and raisins mixture. Then pour this into the baking dish. Place
it in the oven and bake for about 30 minutes.
