| Dessert recipes are more in demand today than ever before. This is
because the varieties of desserts that are available have exceeded the
limits of the wildest imagination. Chocolate has increasingly found its
way into many Indian desserts and we now have chocolate Kheer, chocolate
barfi, and chocolate coconut cakes. The unadulterated form of chocolate - that is cocoa, is very bitter, but when combined with sugar flour, and butter, it loses the bitter taste. A mixture of Cocoa, honey, nuts and spices was actually used by Native American tribes many years ago. This raw form of chocolate is very good for health because it contains antioxidants, that is why it is said that the darker the chocolate, the better it is. Strawberries dipped in Chocolate sauce make a great dessert. What is even better is topping ordinary biscuits with this sauce and refrigerating them for a few minutes. The moment the sauce is firm, add a dollop of vanilla ice-cream and hey presto you have a quick chocolate biscuit dessert in from of you. If you want to drink chocolate cream soda, mix milk with chocolate syrup, blend and add chocolate ice cream to it. This wonderful drink will rejuvenate you. The all time gulab jamun made from flour, milk powder and sugar are mouth waterers. Jalebis---Orange pancakes in syrup are irresistible. Cham-Chams, rasgullas and Ras malais are made from paneer balls boiled in sugar syrup. Ras malais after being soaked in sugar syrup are then soaked in thickened and sweetened milk to which cardamom and strands of saffron have been added. Puddings can either be steamed, boiled or baked. As usual milk is a must. A thickener like cornflower is added and the whole thing is flavored according to one’s taste. Coconut or rice can also be added to the milk before flavoring it with chocolate, vanilla or pistachios. Apple pudding, carrot puddings can be steam cooked. Easy to make, tasty to eat, it serves as a fitting end to a spicy meal. Halwas can be made from doodhi, carrot, or even from moong dal. Suji halwa is a very common item and is enjoyed by everyone. Top these halwas with a generous scoop of ice cream and you will create a fantastic dessert. Forget those calories once in a while and just enjoy yourself.
