Diabetic Cookies

Those tempting sugar cookies, coated with chocolate could be an eye-sore, especially when they are amongst the listed banned foods for you.

Whether insulin-dependent or non-insulin dependent diabetic, the last thing on any of your plates are the cookies made from sugar. And even if you can have them, it can only be one, maximum two, only once in a way. No cookie-binging.

But then, there is nothing really to fret about, considering that confectioners have found an alternate cookie recipe, so that diabetics can own their own cookie jars. And they taste just like the ones you see regularly in the market.
The diabetic cookies have all the ingredients like the sugar ones, the primary difference being that instead of the sugar, the sugar substitutes are to be used. Also, low-fat butter, or low-cholesterol butter should be used. Many use margarine instead. This makes the cookies lighter and with far lesser calories than otherwise.

Almond and apricot cookie
(24 cookies)
·        ¾ cup whole-wheat flour
·        ¾ cup plain flour
·        ¼ cup sugar substitute
·        1 teaspoon baking powder
·        ¼ cup skimmed milk
·        2 tablespoons cooking oil
·        2 tablespoons honey
·        ½ teaspoon almond extract
·        ½ cup chopped apricots
·        ¼ cup chopped almonds
The oven has to be preheated to 350 F. combine the flours, sugar substitute and baking powder in a bowl. Add a little water and knead into a cough. Add the milk, oil, honey and almond extract. Then add the apricots and almonds. Knead the dough till every thing is well mixed into it. Then roll out the dough flat and cut it into shapes and sizes you would like. Place the pieces in a buttered baking dish and set to bake for no more than 30 minutes.

Whole Wheat Chocolate Chip Cookies

·        ½ cup margarine
·        ¼ cup sugar substitute
·        1 teaspoon vanilla essence
·        ¾ cup whole wheat flour
·        ¼ teaspoon baking powder
·        ½ sugar-free chocolate cut into chips
·        ¼ cup skimmed milk
Preheat the oven. In a bowl mix the margarine, sugar substitute and vanilla essence. Add the flour and baking powder and chocolate chips. Knead into dough adding some skimmed milk. Roll out the dough and cut it into small pieces in whatever shape you desire. Place the cookies in a buttered baking dish and bake for not more than 15 to 20 minutes.
Oatmeal Cookies
(12 mini cookies)
·        3 tablespoon margarine
·        1 mashed banana
·        ½ cup whole wheat
·        ½ cup skimmed milk
·        1 teaspoon baking soda
·        1 ½ cup sugar substitute
·        Black raisins
·        1 teaspoon cinnamon
·        1 tablespoon lemon juice
·        2 teaspoons vanilla essence
·        1 ½ cups oats
Knead together all the mentioned ingredients. Roll out the dough and cut into the required shapes and sizes. Bake for no more than 15 minutes at 375 F.

Dry Fruit Cookies
(24 cookies)
·        1 table spoon cooking oil
·        Raisins
·        1 teaspoon cinnamon
·        A pinch of salt
·        ½ teaspoon nutmeg
·        1 teaspoon cooking soda
·        1 cup sugar substitute
·        1 cup whole wheat flour
·        1 teaspoon baking powder
·        Chopped almonds/cashew nuts/dates/walnuts (whatever you like)
Mix the ingredients together and knead into dough. Roll it out flat and cut into the desirable shapes and sizes. Bake for about 20 minutes.
