In today’s time maintaining good health has
become more of a necessity. It is a need, it is an essential and
that is why nutritionists and dieticians are constantly
experimenting with new recipes that are low on calories and good
for the entire family. Vegetarian food is the best option, as
the human body is constituted in a certain way to easily digest
fruits, vegetables, nuts, legumes, pulses, etc. |
In fact, the low calorie and vegetarian recipes keep
the body and light and produces sense of feeling good, with a lot of
energy. So, here are some easy to prepare low calorie and vegetarian
recipes:
Pea Cabbage Rolls
· Dry split peas
· 2 tablespoons tomato sauce
· 1 chopped tomato
· 1 chopped onion
· 1 garlic clove grounded
· 1 tablespoon olive oil
· 1 teaspoon chili sauce
· 10 large cabbage leaves
· ½ cup water
Mix the peas, sauce, tomato, onion, garlic, hot sauce and oil in a large
cooking vessel and steam. Preheat the oven to 350 F. Steam the cabbage
leaves separately. Once the mixture and cabbage is steamed, remove it
all from the stove. Then take each leaf separately and in the middle of
each place some of the pea mixture in the center. Roll it up and place
it in a baking dish. Once all the rolls are ready bake for not more than
20 minutes.
Yummy Lady Finger
· ½ kg chopped lady fingers
· 1 large chopped onion
· ¼ cup skimmed yogurt
· 1 ½ tablespoon cooking oil
· ½ cup water
· Chopped coriander leaves for the garnishing
· 1 teaspoon red chili powder
· Salt to taste
· ¼ teaspoon garam masala
· 1 tablespoon garlic ginger paste
· ¼ teaspoon turmeric powder
· ¼ cumin
Grind ½ of the chopped onions with the ginger garlic paste and all the
spices. Add some water so the mixture becomes a paste. Blend the paste
into the yogurt. Add some water needed if it becomes too thick. Then
place the cooking pan on the stove and pout the oil. Then add the
remaining onions and cook till golden brown. Add the yogurt blend and
cook for about 7 to 8 minutes. Then add the lady fingers and the water.
Cover the pan and let is cook for about 10 minutes on slow flame. When
serving garnish with the coriander leaves.
Malai Kofta
For the Kofta
· 100 grams paneer
· 5 mashed potatoes
· 1 finely chopped onion
· Green peas
· 2 tablespoons ginger-garlic-green chili paste
· 1 teaspoon lemon juice
· ½ teaspoon red chili powder
· Salt to taste
Mix the above ingredients together and make small balls. Bake them for
about ten minutes.
For the gravy
· 125 grams skim cream
· 50 grams mashed paneer
· 100 grams skim milk
· 1 chopped onion
· 2 tablespoons ginger-garlic-green chili paste
· Finely chopped coriander leaves for the garnishing
· ½ cup skim yogurt
· 1 teaspoon red chili powder
· 1 teaspoon garam masala
· 1 teaspoon coriander powder
· ½ teaspoon turmeric powder
· ½ cumin powder
· Cardamom
· Salt to taste
· 1 tablespoon cooking oil
Mix the spices and ginger-garlic-chili paste into the yogurt. Then
except for the coriander leaves grind all the mentioned ingredients
together. Take a large cooking pan and heat the oil. Add the yogurt
paste cook for 5 to 10 minutes. Add the blend in the grinder, along with
1 ½ cups of water, stir well and leave it to simmer for 10 minutes. Once
the gravy is ready. Place the koftas in a serving bowl and pour the
gravy over them. Garnish with the coriander leaves.
