easy diabetic recipes

 

‘Diabetic food could be rather boring’. This was true till some years ago, but not anymore. Nutritionists, dieticians, chefs and cooks around the world have been constantly experimenting with numerous recipes that would make a diabetic enjoy his/her meals, rather than cringe each time. Yes, most diabetics consider the ailment a curse, as they need to refrain from tasty foods. And tasty food for everyone is the fried, high-cholesterol recipes. And who can forget the yummy desserts.

Well, things have changed over the years. This is because of the various sugar substitutes that has made desserts a possibility in the daily diet. Then the low-fat, low-cholesterol salad dressings, sauces and various other products; as well as the cheese and butter.
 
Today, there are innumerable diabetic recipes to select from, which encourages people to eat right, without having to cheat at all. One of the biggest problems most families with diabetic patients would face was that the patients would tend to cheat and eat desserts and high-fat or fried fast foods when out.
 
What’s more with the new-age recipes is that they taste just like the original, but only contain less calories. So one can enjoy a cheesy pasta or pizza, along with a diet lemonade, and a cheesecake. This is just one of the long list of tempting menus that could served, as a diabetic meal, within the required, and most importantly prescribed calorie count.
 
Here are simple and mouth-watering diabetic recipes…
 
Sweet n Spicy Snack recipe
 
·        30 ounces of beans
·        2 cups wheat cereal
·        ½ cup chunks of dried pineapple
·        ½ cup of black raisins
·        1 tablespoon honey
·        2 tablespoons Worcestershire sauce
·        1 teaspoon powdered garlic
·        ½ teaspoon red chili powder
 
In a baking dish place a layer of the kidney beans. Bake it, stirring it every few minutes. Take a cooking pan and roast the cereal, pineapple and raisins. Then add the baked kidney beans. Add the honey, Worcestershire sauce, powdered garlic and chili powder.  Stir the entire mixture till it is dry. This snack can stored for a couple of days.
 
Baked Macaroni with Vegetables recipe
 
·        1 small chopped onion
·        1 box macaroni
·        Spaghetti sauce
·        Grated Parmesan cheese
 
Cook the onions in a cooking pan till golden brown. Then fill a pot with water. Add the macaroni. Let it boil then stir in the sauce. Pour this mixture into the cooking pan containing the onions. Stir the mixture. Sprinkle the grated cheese. You can add some dried herbs and spices, according to taste.
 
Brown rice pulao with asparagus and mushrooms
 
·        ½ tablespoon olive oil
·        1 cup brown rice
·        3 cups water
·        1 small finely chopped onion
·        Finely sliced fresh mushrooms
·        ¼ teaspoon ground nutmeg
·        Asparagus tips
·        Grated mozzarella cheese
·        ½ cup chopped fresh parsley
 
Heat the olive oil in a large sauce pan. Add the rice and sauté till the grains becomes golden brown. Add the water and stir in the onion, mushrooms and nutmeg. Let it simmer for half an hour. Then add the asparagus and let it cook for five minutes. Then stir in the grated cheese. Before serving garnish with the parsley.
 
Brown Rice and Red Beans recipe
 
·        1 ½ cups kidney beans that have been rinsed a soaked overnight
·        6 ½ cups of water
·        4 bay leaves
·        1 ¼ cups brown rice
·        2 ½ tablespoons olive oil
·        Salt to taste
·        1 small chopped onion
·        1 chopped green pepper
·        1 chopped celery stalk
·        Grounded garlic
·        ½ teaspoon garam masala
·        ½ teaspoon cloves grounded
·        ½ teaspoon pepper
·        1 cup vegetable stock
·        1 tomato pureed
·        1 teaspoon hot pepper sauce
·        Finely chopped coriander
 
In a sauce place the beans and pour into it four cups of water along with the bay leaves. Boil the mixture and then leave to simmer for an hour. While the beans are cooking take a cooking pan. Heat the olive oil and add the brown rice and salt. Stir for a few minutes then pour in 2 ½ cups of water. Simmer for 45 minutes. Then stir in the beans. Cook for a few minutes. Stir in the rest of the ingredients and cook for a while. When serving garnish with the coriander leaves.
